Our Story

We opened our doors in 2020 with a simple goal: bake delicious things, do a little good for the planet, and bring people together. Inspired by Chicago’s incredible craft beer scene, we partnered with local breweries to repurpose spent grain—giving that leftover goodness a second life in our cookies, brownies, breads, and more. Our love for baking started at home, surrounded by family, flour-covered counters, and a whole lot of taste-testing. Family has always been a big part of our journey—and they still are! From baking to behind-the-scenes help (and the occasional tough critic), it’s a true family effort around here.

Sustainability is baked into everything we do. Food waste is a huge issue, and we saw an opportunity to do things differently. By using ingredients that would otherwise go to waste, we’re doing our part to reduce our footprint—without skimping on flavor. At the end of the day, we’re here to share delicious baked goods, support local partners, and build something meaningful in the community we love. Our Process

Brewing: Once the grains are utilized for their sugars, they are then disposed of and are considered spent grains.

Hand-Off: The local brewery will provide spent grains leftover from the brewing process. 

Dry & Grind: Spent grains require 12 hours in the oven to dry before they can be ground to flour.

Bake: The dried spent grains are then baked into our delicious baked goods!

Spent Grain Facts

Spent grains make up about 85% of all the waste produced by breweries — that’s a huge amount of leftover grain! Instead of letting it go to waste, we turn these nutrient-rich grains into delicious baked treats, giving them a second life and helping reduce food waste.

Spent grains are packed with moisture, so they don’t keep long when fresh.

Fresh spent grains need to be used within 1 day if kept at room temperature.

When refrigerated, they can stay good for up to 3 to 5 days.

To enjoy them longer, we dry the grains, which extends their shelf life to several months when stored properly in a cool, dry place.

By drying and repurposing spent grains, we make sure none of that flavor and nutrition goes to waste.

Spent grains are rich in dietary fiber and protein, adding nutritional value to breads, cookies, and other baked goods.
